Ingredients:

Instructions:

1. Step

First wash the pumpkin thoroughly, dry it and remove the seeds. Then cut it into pieces of about 2 cm. Peel and finely chop the onion and garlic.

2. Step

Pour the BAM extra virgin olive oil into a large pot and heat it over a medium heat. Add the chopped onion and garlic and fry, stirring occasionally, until the onion is golden and slightly charred. Then add the sliced pumpkin to the pot and fry for a few minutes until slightly softened.

3. Step

Pour the stock over the whole, add the bay leaves and season with salt, pepper and nutmeg. Cook the soup over a medium heat for about 25 minutes, until the pumpkin is completely soft.

4. Step

Once the pumpkin is cooked, blend the soup with a stick blender until smooth and creamy. Add the cooking cream, bring to the boil and season with BAM garlic and onion powder if necessary.


Pour the soup into plates and garnish with a few spoonfuls of sour cream. Enjoy!
