Ingredients:
- 200 g millet porridge
- 1 onion
- 1 red pepper
- 1 flask
- 1 teaspoon BAM Spice blend Herbal Garden
- 1 carrot
- 100 g feta cheese
- A little BAM extra virgin olive oil spray
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- Fresh basil for garnish
Millet porridge with vegetables and feta cheese is a great example of a healthy savoury dish that combines simple ingredients with rich flavours. Rinse the millet porridge under cold water and cook it in salted water according to the instructions on the packaging (about 15 minutes). Then drain and leave to cool slightly.
Fry the chopped onion and garlic in heated olive oil until golden brown.
Add the diced peppers, courgette and carrot and fry for a further 5-7 minutes until the vegetables are soft.
Stir the cooked millet into the vegetable mixture and finish with the crumbled feta cheese.
Stir gently and cook for a few more minutes to meld the flavours. Serve warm, garnished with fresh basil.
