First, season the chicken fillets with salt and pepper. Heat the olive oil in a large frying pan over a medium-high heat and fry the fillets for about 5-6 minutes on each side, until golden brown and cooked through. When the fillets are cooked, remove them from the pan and set them aside.

In the same pan, add the chopped garlic and fry for 1 minute until fragrant, taking care not to burn it. Then pour the chicken stock, lemon juice and lemon zest into the pan and cook for 3-4 minutes until the sauce thickens slightly.

Return the chicken fillets to the sauce and cook for a further 2-3 minutes to reheat the chicken and absorb the flavours. Finally, stir in the butter to make the sauce creamy and glossy.Place the chicken on a plate and pour the sauce over it. Enjoy!
