The blend is a combination of (you won't believe it) - five spices, which are measured in a specific ratio. These spices are: Chinese cinnamon, which is also known as cassia cinnamon, cloves, fennel seeds, star anise and black pepper. As is the case with most spice mixes, homemade spice blend recipes vary from region to region. The blends we offer tend to be as close as possible to what is considered to be the real thing. Other recipes may also contain white pepper, nutmeg, ginger, etc.
