The secret to making the perfect semolina gnocchi at home is to use the right ratio of ingredients, 1 - 3 - 6. This means using 30 grams of butter and 60 grams of wheat semolina for one egg. Follow our simple recipe for the perfect semolina dumplings.

1. Step Break the egg into a bowl and whisk it thoroughly with a fork or whisk. While whisking, slowly stir in the melted and cooled butter. Add a pinch of salt and, if desired, a little BAM of dried parsley.
2. Step Gradually add the semolina to the egg-butter mixture, stirring constantly to combine the ingredients evenly. When the mixture reaches a medium consistency, stop stirring. Cover the bowl and leave the mixture to stand for about 15 minutes, allowing the semolina to puff up.
3. Step There are two options for cooking the dumplings: you can cook them in salted boiling water or add them directly to the soup. To shape the dumplings, use two spoons or one spoon, which has been previously greased or soaked in hot broth or water. Use a spoon to scoop up a portion of the mixture and dip it into the slightly boiling liquid, where the spoon will separate itself from the spoon. Repeat the process until all the mixture has been used.
4. Step Cook the dumplings, covered, for 10-15 minutes until soft and firm. Make sure that the liquid does not boil too much during cooking.
