Wash and peel the potatoes well. For roasted potatoes, it is usually better to use potatoes that do not become too soft during cooking. Cut them into smaller pieces or cubes, depending on personal preference.

Put the potatoes in a large pot and cover with water. Salt the water and boil the potatoes until almost tender but still firm to the touch. This usually takes about 10-15 minutes, depending on the size of the pieces. When the potatoes are cooked, drain the water.

Heat the BAM olive oil in a large frying pan over a medium-high heat. Add the thinly sliced onion and fry until golden. Add the drained potatoes to the pan and distribute them evenly. Sprinkle the BAM potato seasoning mix over the potatoes. Adjust the quantity according to your taste. Fry the potatoes over a medium heat until crispy and golden brown on all sides. Stir occasionally to ensure even browning. Add salt and pepper to taste if necessary.

Serve the potatoes hot. Garnish with fresh herbs such as chopped parsley for extra flavour and colour.
