Oven pancake, also known as "Aries pancake" or "Dutch baby" pancake, is a wonderful and easy dessert that bakes right in the oven and is stunningly fluffy and delicious.

You can decorate the pancake with powdered sugar or fresh fruit as you wish.

This pancake recipe from the oven is simple and allows for lots of variations. You can experiment with different types of fruit, add chocolate drops or nuts and enjoy the wonderful, light texture provided by the combination of BAM coconut oil and vanilla sugar.

Preheat the oven to 220°C. Add 4 tablespoons of BAM coconut oil spray to a large cast-iron pan or baking tray suitable for the oven. Place in the oven to heat the oil and heat the pan well.

In a blender or with a hand mixer, beat the eggs until frothy. Add the milk, flour, salt and BAM vanilla sugar with real vanilla. Mix until smooth.

Carefully remove the hot pan from the oven. The pan will be very hot, so use oven gloves. Quickly pour the batter into the pan with the hot coconut oil on top. Return the pan to the oven and bake for about 20 minutes, or until the pancake has risen and is golden brown.

As soon as you take the pancake out of the oven, decorate it with fresh fruit of your choice. Sprinkle with icing sugar and, if desired, add a little BAM vanilla sugar for extra flavour. Serve immediately as the pancake will fall apart over time, which is perfectly normal.
