Homemade basil pesto

First, lightly fry the pine nuts in a dry frying pan over a medium heat until golden brown. Stir them all the time so that they fry evenly. You need to be careful, as they can burn quickly. Once the pine nuts are fried, place them on a plate to cool.
In a blender or food processor, combine the BAM basil, roasted pine nuts and BAM garlic powder, grated Parmesan cheese and extra virgin olive oil. Blend until smooth and creamy. If you want a thicker sauce, add a few more fresh basil leaves and parmesan cheese. Add salt and pepper to taste. Taste test and adjust the ingredients as desired.
Transfer the pesto to a glass jar and cover with a few drops of olive oil to prevent oxidation. Close the jar with the lid and store in the fridge.There, your homemade pesto is ready! Use it as a pasta sauce, as an accompaniment to chicken, fish or vegetables, or spread it on fresh bread. Enjoy!
