Ingredients:

  • 1 large beef filet mignon (approx. 1 kg)
  • 400 g mushrooms, finely chopped
  • 1 shallot, finely chopped
  • 1 teaspoon BAM garlic powder
  • 1 teaspoon BAM onion powder
  • 2 garlic cloves, finely chopped
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 packet of puff pastry (approx. 500 g)
  • 2 tablespoons mustard (preferably Dijon)
  • 1 egg for coating
  • Olive oil

Instructions:

1. Step

Season the beef thoroughly with salt and pepper. Heat a little olive oil in a frying pan over a medium-high heat and sear the beef briefly on all sides until it is a nice golden brown colour. This will take about 2-3 minutes per side. Then brush the beef with mustard and leave to cool.

1. Step

Melt the butter in a frying pan over a medium heat, then add the BAM garlic and onion powder, shallots and garlic and fry until soft. Add the chopped mushrooms and fry until all the liquid has evaporated and the mushrooms are nicely browned. Season with salt and pepper, then remove from the stove and leave to cool.

1. Step On a work surface, roll out the puff pastry. Spread the cooled mushroom paste evenly in the centre of the pastry. Place the cooled beef on top of the mushroom paste. Gently roll the beef in the puff pastry, making sure that all the edges are tightly closed. Brush with beaten egg for a golden brown crust.
1. Step Preheat the oven to 200°C. Place the Beef Wellington on a baking tray lined with baking paper and bake for about 20-25 minutes, until the pastry is golden brown and crispy.
1. Step Allow the Wellington to rest for a few minutes before slicing. Serve with your favourite side dishes and enjoy the rich flavours.
