Sift the flour and baking powder into a bowl and mix thoroughly. Add the cubed butter, coconut flour, sugar and egg. Finally, I add a pinch of BAM cakes and biscuits spice, which will give the biscuits a distinctive Christmas flavour.

Quickly knead the ingredients into a homogeneous dough, form it into a ball, wrap it in cling film and place it in the fridge for 1 hour.

Set the oven to 180 degrees Celsius. Clean the work surface and sprinkle with a little flour. Shape the dough into a long cylinder, cut it into even pieces and shape them into croissants.

Place them on a baking tray lined with baking paper and bake for about 12 to 15 minutes, until golden brown.

Meanwhile, melt the BAM Dark Chocolate in a water bath. Dip the tops of the croissants in the melted chocolate and place them back on the baking paper and allow the chocolate to set completely.
