1. Step
Dough: In a medium saucepan, bring the water, butter, sugar and salt to the boil. Once boiling, remove from the heat and quickly stir in the flour. Stir until the dough comes together and begins to separate from the sides of the bowl.

Beat in the eggs: let the dough cool a little, then beat in the eggs one by one. Stir each egg in well before adding the next.

Frying: Heat the oil to 180°C. Press the dough through a piping bag fitted with a star nozzle and fry in the oil until golden. Fry the churros for about 2-3 minutes until golden brown.

Sprinkle: Place the fried churros on a paper towel to drain off excess oil, then roll them in BAM vanilla sugar.
