Peel the potatoes (but it's also okay to leave them unpeeled) and cut them into even strips or sticks, like restaurant fries.
Place the sliced fries in a bowl of cold water and leave to soak for 20-30 minutes. This will remove excess starch and make the fries crispy.
After soaking, drain the potatoes well and dry them with a kitchen cloth or paper towels.
Place the dry fries in a bowl, add the oil and salt and potato seasoning. Stir well to ensure that all the pieces are evenly coated with the oil and seasoning.
Arrange the fries evenly in the basket of the fryer in a single layer to allow the hot air to circulate evenly around them. Bake at 180-200°C for about 15-20 minutes, depending on the thickness of the fries and the model of fryer. Stir or shake the basket halfway through to ensure the fries are evenly browned.
When the fries are golden brown and crispy, take them out of the fryer. Add more salt if necessary.
